Dinner for One
Baroste Butterflied Chicken Breast
A succulent Butterflied Breast, layered in Cheese and Pineapple,
Nested in a blanket of Spaghetti Neapolitan.
Served with a side of grilled brown bread, dappled with butter, garlic and parmesan cheese.
With a fresh Peach Cobbled Dessert by Tener Duarte
Last time I made this meal was in August 2019, in Mongu, Zambia for a visiting journalist, Taddy of Zimbabwe in honor of his birthday. Per request of Monde Litungi, I have made it again, so she can remember how to make it for herself, family in friends, as I am unable to leave the house, in this unsafe environment. Yet protected by one of the shirts given to me by the Lozi people of the Baroste Plain, Lwitumesi.
